Simple Epic Summer Vegetarian Tacos
These delicious Vegetarian Tacos are packed with seasoned veggies, topped with a smoky chipotle sauce and garnished with lime, cilantro, and tomatoes. Ingredients
For the tacos:
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 Cup canned corn, drained
- 1 can black beans, rinsed and drained
- 1 tablespoon taco seasoning
- 8 small corn tortillas
- 1 Cup shredded lettuce
- 1 large tomato, diced
- 1⁄4 Cup Fresh cilantro, chopped
For the chipotle sauce:
- 1 Cup raw cashews, soaked for four hours
- 1⁄2 Cup water
- 2 teaspoons chipotle in adobo sauce
- 2 tbls lime juice
- Salt, to taste

Directions
Heat oil in a large pan over medium heat.
Add onion and garlic, sauté until fragrant. Add bell pepper and zucchini, stir occasionally until tender.
Add corn, black beans, and taco seasoning. Stir well and cook for a few minutes until heated through. Set aside.
To make the chipotle sauce, combine soaked cashews, water, chipotle in adobo sauce, lime juice, and salt in a blender. Blend until smooth.
Warm tortillas in a dry skillet on medium heat.
Assemble tacos: spoon the vegetable mixture onto each tortilla, drizzle with the chipotle sauce, and top with shredded lettuce, diced tomato, and chopped cilantro.
Serve immediately.
