Simple Sauteed Garlic Bok Choy Stir-Fry
Garlic Bok Choy is a quick, easy, and delicious Asian side dish, with fresh bok choy sautéed with savory garlic. This healthy and vegan-friendly dish is full of nutrients and flavor. It's simple, yet bursting with a buttery garlic flavor that pairs perfectly with any of your favorite Asian-inspired dishes.

- 5 Pounds bok choy
- 1 tablespoon cooking oil (your choice but sesame oil gives a great flavor)
- 41⁄2 cloves garlic, minced
- 1 tablespoon soy sauce
- salt and pepper to taste
- red pepper flakes (optional)

Start by trimming the bottoms off your bok choy stalks. Then rinse them thoroughly to remove any grit. Separate the leafy greens from the stalks, then chop them into bite-sized pieces.
Heat your oil in a large skillet or wok over medium heat. Once hot, add in the minced garlic and stir frequently.
As soon as the garlic turns golden brown, add in the bok choy stalks. Stir fry these for a couple of minutes before throwing in the leafy greens.
Add in your soy sauce, some salt, and pepper. Continue stir frying until the greens have wilted and the stalks are crisp-tender. This should take about 2 minutes.
Sprinkle red pepper flakes if using. Ensure everything is combined and well coated, then remove from heat.
Serve the Garlic Bok Choy as a side with your preferred Asian main dish, or even as a light meal on its own.
