Simple Veggie Curry

A vegetarian curry with vegetables and spices. This healthy dish can be enjoyed with rice or naan bread.

  • 1 tablespoon of minced ginger Added to
  • 1 teaspoon of cumin Added to

  • 1 teaspoon of turmeric powder Added to
  • 1 teaspoon Chilli Powder Added to
  • 2 carrots Added to
  • 2 potatoes Added to
  • 1 red paprika Added to
  • 1 zucchini Added to
  • 1 can of chickpeas, drained and rinsed Added to
  • 1 Cup of vegetable broth Added to
  • 1 can of diced tomatoes Added to
  • Salt and pepper, to taste Added to
  • Fresh cilantro, chopped for garnish Added to

1. Step

In a large pot or Dutch oven, heat the oil on medium-high heat.

2. Step

Add the onions and cook for about 5 minutes until they are softened.

3. Step

Add the garlic and ginger and cook for another 2 minutes.

4. Step

Add the cumin, coriander, turmeric, and chilli powder and stir well.

5. Step

Add the carrots, potatoes, red bell pepper, and zucchini and stir until well-mixed.

6. Step

Add the chickpeas, vegetable broth, and diced tomatoes and stir again.

7. Step

Bring the mixture to a boil and then reduce the heat to low.

8. Step

Cover and simmer for about 20 minutes or until the vegetables are tender.

9. Step

Season with salt and pepper to taste.

10. Step

Garnish with fresh cilantro. Serve hot with rice or naan bread.
