Tasty baked chicken thighs
This recipe for baked chicken thighs is one of my favorites because it results in incredibly juicy and flavorful chicken. Chicken thighs are my favorite parts of chicken to bake because they maintain their juiciness even after long cooking. Plus, the ingredients are simple, but always manage to bring out the best in the chicken creating a unique and delicious dish.
Ingredients
- 8 thighs Chicken
- 4 clove garlic
- 1 Lemon (zest and juice)
- 1 tablespoon of dried rosemary
- 1 tablespoon of dried thyme
- 2 cdas of olive oil
- salt and pepper to taste

Preheat the oven to 200°C (400°F). While it is heating up, prepare the chicken thighs by removing the skin if you want a healthier version. However, for crispier thighs, I recommend leaving the skin on.
In a large bowl, mix the crushed garlic, lemon zest and juice, rosemary, thyme, olive oil, salt and pepper. Add the chicken thighs and make sure they are well coated with the mixture. As a tip, it is best to do this with your hands so that the marinade penetrates well into the meat.
Place the chicken thighs on a baking sheet and bake for about 40-45 minutes. Remember to turn the thighs halfway through cooking so that they brown evenly. In my experience, controlling the cooking time is crucial for juicy chicken. Under my supervision, 40 minutes is the perfect time.
After 45 minutes, check that the chicken is cooked through. It should have a delicious golden color. If necessary, you can leave it in the oven for a few additional minutes.
Let the pan rest for 5 minutes before serving to allow the juices to redistribute throughout the chicken. Remember that this step is key to maintain the juiciness of the meat.
