Ultimate Crunchy Chicken Salad with Celery
This recipe is a mixture of refreshing and savory flavors that indeed bring a delightful twist to your regular chicken salad.
Ingredients
- 2 boneless skinless chicken breasts
- 4 Stems of celery, finely chopped
- 1 medium onion, finely diced
- 1 Cup mayonnaise
- 2 tbls Dijon mustard
- 1 tablespoon fresh parsley, chopped
- salt and pepper to taste
- Fresh lemon juice (optional)
- Lettuce leaves, for serving

Start off before anything else by boiling the chicken breasts. In my experience, a pot with enough water to cover the chicken and a pinch of salt gives the best result. Boil them for about 20-25 minutes until they are thoroughly cooked.
While the chicken is boiling, you can utilize this time to prepare the celery and onion. Dice them as finely as you wish, based on your preferred texture.
When the chicken is ready, drain it, let it cool, and then shred it into small pieces. My tip here is to let the chicken cool down for a while to avoid burning your fingers while shredding.
In a large bowl, it's time to mix all your ingredients to form your salad. Start with the shredded chicken, the diced celery, and the onions. Then, add your mayonnaise, mustard, freshly chopped parsley, and a squeeze of fresh lemon juice (if you wish, it adds a refreshing tang!).
Give it a good mingle to make sure all the flavors combine well, and then don’t forget to season it with salt and pepper. Make sure you taste your mixture at this point and adjust the seasoning accordingly.
Now the salad is ready! I recommend serving it on a bed of fresh lettuce leaves which complements the creamy chicken salad while adding a welcome crispness. You can also chill it for an hour before serving to enhance the flavor.
