Directions
For the sesame potatoes recipe, peel the potatoes and cut into equal-sized pieces. This is important so that all the potatoes cook at the same time.
Place the potato pieces in a large pan and cover with water. Bring the water to the boil and simmer for 10-15 minutes until the potatoes are slightly soft but not falling apart. This is the trick to getting them crispy on the outside and soft on the inside.
Drain the cooked potatoes and leave to drain well. Good drying helps to make the potatoes crispier.
While the potatoes are draining, heat the olive oil in a large frying pan over a medium heat.
Add the potatoes and sesame seeds to the pan and mix well until each potato is coated with oil and sesame seeds. Here it is important to keep the potatoes in a single layer so that they brown evenly.
Season with salt and pepper and roast for 15-20 minutes until golden brown and crispy.
Optionally, sprinkle the sesame potatoes with fresh parsley and serve. The fresh parsley gives the potatoes a lovely, vibrant aroma and provides a striking contrast to the golden brown color of the potatoes.
