Apple cider cake
This apple cider cake is a real highlight among my baking recipes. Not only because of the special ingredient - the apple cider - but also because it is incredibly moist and delicious. I have made this cake many times for different occasions and it was always a real eye-catcher.
Ingredients
For the dough:
- 250 g butter
- 200 g sugar
- 4 Eggs
- 1 Pinch salt
- 300 g flour
- 2 TL baking soda
- 200 ml cider
For the topping:
- 500 g apple
- 2 Tablespoon sugar
- 1 TL cinnamon
- 50 g almond slices

Directions
To bake the apple cider cake first cream the butter together with the sugar. I recommend using a hand mixer for this step to achieve a perfectly creamy consistency.
Add individual eggs one by one to the butter mixture and mix well. Add the salt as well.
Mix the flour and baking powder and stir into the batter alternately with the apple cider. I found that sifting the flour in carefully really makes a difference - it makes the dough much lighter and airier.
Pour the dough into a greased and floured cake pan (diameter approx. 26 cm) and smooth it out.
Peel, core and dice apples. Mix together with sugar and cinnamon and spread on the dough. The almond flakes must not be missing here - they give the cake that certain extra and provide a wonderfully crunchy topping.
Bake the apple cider cake in a preheated oven at 180 °C (top/bottom heat) for approx. 60 minutes. If necessary, cover with aluminum foil so that the cake does not get too dark.
