Asian Garlic Ginger Crispy Chicken Breasts

Ingredients
- 500 gms of skinless, boneless chicken breasts cut into bite-size pieces
- 2 tbls of vegetable oil
- 4 cloves of garlic, minced
- 1 tablespoon of fresh ginger, minced
- 1⁄2 Cup of soy sauce
- 1⁄2 Cup of chicken broth
- 0.3 Cup of brown sugar
- 1⁄4 Cup of spring onions, chopped
- salt and pepper to taste
- 1 tablespoon of cornstarch mixed with two tablespoons of water

Directions
Heat the vegetable oil in a large pan over medium-high heat.
Add the chicken pieces, and sauté until browned. Remove the chicken from the pan and set it aside.
In the same pan, add the minced garlic and ginger, and sauté until fragrant.
Pour in the soy sauce, chicken broth, and brown sugar. Stir until the sugar has dissolved.
Put the seared chicken back into the pan and let it simmer in the sauce for about 20 minutes, or until fully cooked.
Stir in the cornstarch-water mixture to thicken the sauce. Continue to simmer for another 2-3 minutes.
Season with salt and pepper to taste.
Garnish with chopped spring onions before serving.
