Authentic Greek Spinach and Feta Pie
Fresh baby spinach, feta cheese, and flaky puff pastry come together in this classic Greek dish that is a perfect choice for a light lunch, dinner, or a savory snack. It is a versatile dish that incorporates the health benefits of spinach and the rich flavor of feta cheese in a tasty pie.
Ingredients
- 4 cups of fresh baby spinach
- 200 gms of feta cheese
- 2 large eggs
- 1 medium onion, chopped finely
- 2 cloves of garlic, minced
- 1⁄4 Cup of olive oil
- salt and pepper to taste
- 2 letters of puff pastry
- 1 egg yolk for glazing

Directions
Preheat the oven to 375°F (190°C).
Heat the olive oil in a skillet over medium heat. Add the chopped onion and garlic to the skillet and sauté until soft and translucent.
Add the spinach to the skillet, season with salt and pepper, and cook until wilted.
Crumble in the feta cheese and stir until it begins to melt. Take off the heat.
In a separate bowl, whisk the eggs. Pour the eggs into the skillet and stir to combine everything evenly.
Roll out one sheet of puff pastry and fit it into the bottom of your pie dish. Pour the spinach and feta mixture into the pastry-lined dish.
Roll out the second sheet of puff pastry and cover the top of the pie. Crimp the edges to seal and make several slits in the top to allow steam to escape.
Brush the top with the egg yolk for a golden finish.
Bake in the preheated oven for 30-35 minutes until the pastry is puffed and golden.
Allow to cool for a few minutes before serving.
