Authentic Italian Napoli Pasta Sauce

- 2 cans whole peeled tomatoes
- 1⁄2 Cup olive oil
- 1 onion
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon dried basil
- 1⁄2 teaspoon dried oregano
- 1⁄2 teaspoon sugar
- 1 bay leaf

Directions
Drain the whole peeled tomatoes and set aside the liquid.
In a large saucepan, heat olive oil over medium heat and add in the chopped onion. Cook until softened, about 3 minutes.
Add garlic and cook for 1-2 minutes until fragrant.
Add in the peeled tomatoes and break them up. Add tomato liquid, salt, dried basil, dried oregano, red pepper flakes, sugar, and bay leaf.
Bring the sauce and let it cook for about 30 minutes, until it thickens.
Remove the bay leaf and discard it.
Puree the sauce using an immersion blender until smooth.
Adjust the seasoning to taste and add water if necessary.
