Authentic Mexican Street Corn On The Cob
This Mexican Corn recipe, traditionally known as “Elote”, is a popular street food in Mexico, and for a good reason. It's a flavorful blend of grilled corn smothered with creamy, cheesy, spicy and tangy toppings, offering a burst of flavors in every bite!
Ingredients
- 4 fresh ears of corn
- 1⁄2 Cup of mayonnaise
- 2 cloves of garlic, minced
- 1⁄4 Cup of chopped fresh cilantro
- 1⁄2 Cup of grated Parmesan cheese
- 1 lime, quartered
- 1 teaspoon of chili powder
- salt to taste

Directions
Heat the grill on medium-high heat. Place the corn on the grill, and cook for approximately 10-12 minutes, turning occasionally until the corn is charred and cooked through.
In a bowl, combine the mayonnaise, garlic, and cilantro, stir until well mixed. In a separate bowl, mix the Parmesan cheese and chili powder.
Once the corn is done grilling, remove it from the grill and allow it to cool a bit. Then, spread the mayonnaise mixture over each ear of corn.
After that, sprinkle each corn ear with the Parmesan cheese and chili powder mixture. Season with salt to taste.
Lastly, squeeze the lime quarters over the corn
