Authentic Original Chinese Spicy Orange Chicken

- 11⁄2 Pounds boneless, skinless chicken thighs cut into one inch pieces
- salt and pepper to taste
- 1⁄2 Cup maize starch
- 2 large eggs, beaten
- 1⁄4 Cup vegetable oil
- 0.3 Cup orange juice
- 0.3 Cup sugar
- 1⁄4 Cup vinegar
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon grated orange zest
- 2 teaspoon cornstarch dissolved in one tablespoon water
- 2 green onions, sliced

Directions
Season the chicken with salt and pepper, then coat the chicken pieces with cornstarch. Dip each piece into the beaten eggs.
Heat the vegetable oil in a large frying pan over medium heat. Add the coated chicken pieces and fry until golden brown and crispy, about 5-7 minutes. Remove the chicken and set it aside.
In the same pan, add the orange juice, sugar, vinegar, garlic, soy sauce, and orange zest. Bring the mixture to a boil.
Stir in the cornstarch dissolved in water, cook until the sauce has thickened, about 2-3 minutes.
Return the chicken to the pan and stir until all the chicken pieces are evenly coated with the orange sauce.
