Baked zucchini with tomatoes
Baked zucchini with tomatoes is one of my favorite dishes. This dish is light and fresh, just what you need after a long day at work.
Ingredients
- 1 a piece large zucchini
- 2 a piece Large tomatoes
- 100 g Mozzarella cheese
- 2 cloves garlic
- olive oil
- Salt and freshly ground black pepper
- coarse salt
- 1⁄2 spoons Dry basil
- 1⁄2 spoons dried oregano

Directions
Wash the zucchini and tomatoes and cut them into roughly equal slices.
Spread the zucchini and tomatoes on a baking sheet, sprinkle with salt, freshly ground black pepper, dried basil and oregano. I often add dried thyme to my baked zucchini. Its flavor is excellent with the vegetables.
Spread the sliced mozzarella over the tomatoes and zucchini. Sprinkle each piece with a little coarse salt.
Preheat the oven to 200 degrees and bake the zucchini with tomatoes and cheese for about 20 minutes, or until the cheese is nicely browned and the zucchini is soft.
Drizzle with olive oil before serving.
