Mix water milk and heat it to 32 degrees Celsius.
Now, add the sourdough starter and swirl it into the liquid.
It's time to add all-purpose flour with stirring and leave the dish for 30 minutes in a warm place.
Finally, take the dough out, add sugar, kosher salt, egg, and melted butter with stirring, and gradually add all-purpose flour until all get thoroughly blended.
Now knead the dough for 3-4 minutes until a smooth ball is formed.
Transfer it to a lightly oiled bowl, cover it, and set it aside in a warm place for 30 minutes.
Then do one set of stretches. So, take a bit of dough and stretch it up and over itself, then fold it back down and continue the procedure about eight times. Now place it again in a warm environment for 3 hours.
Coat the dough and working area with cold melted butter to avoid sticking. Now roll the dough.
Now prepare sugar filling. Combine the granulated and brown sugars and ground cinnamon in a mixing bowl.
Sprinkle the sugar filling on the top, roll it firmly, then cut it precisely to make mini cinnamon scrolls.
Now leave it overnight.
Bake the mixture in preheating the oven to 190 degrees Celsius for 25-30 minutes until a nicely browned top is formed.
