Best Lamb Shank Slow Cooker Recipe

- 4 lamb shanks
- 3 tbls olive oil
- 2 onions
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 Cup red wine
- 2 bay leaves
- 1 teaspoon dried thyme
- 2 tbls tomato paste
- Salt and pepper, to taste

Season the lamb shanks with salt and black pepper.
Heat the olive oil in a large skillet over medium-high heat. Add the lamb shanks and brown them on all sides, about 5 minutes per side.
Remove the lamb shanks and place them in the slow cooker.
Add the chopped onions and minced garlic to the slow cooker and cook until the onions are soft, about 5 minutes.
Add the broth, red wine, leaves, thyme, and tomato paste to the skillet. Season with salt and black pepper to taste.
Bring the sauce to a boil, stirring occasionally. Pour the sauce over the lamb shanks in the slow cooker.

Remove the bay leaves from the sauce.
