Best & Quick Rye Flour Pizza
Ingredients
Dough
- 2 spoon active dried yeast
- 3⁄4 Cup hot water
- 3⁄4 Cup rye flour
- 11⁄4 cups bread flour
- 1 spoon salt
- 1⁄2 spoon ground caraway seeds
- 3 tablespoon olive oil
Toppings
- 1 Cup Ricotta cheese
- 3⁄4 spoon Lemon zest
- 1 spoon salt
- 1⁄2 spoon ground black pepper
- 6 oz mozzarella
- 1 oz parmesan
- 3 tablespoon balsamic glaze
- 1⁄2 Cup arugula
- olive oil

Directions
Combine the yeast, 1/4 cup of the warm water, and 1/4 cup of the rye flour together. Let sit for 15 minutes.
Mix the bread flour, remaining rye flour, salt, and caraway seeds. Add the yeast mixture, oil, and remaining warm water and beat together in a mixer for about 10 minutes. Your dough should be elastic and smooth.
Put the dough in a bowl, cover with plastic wrap and let it rise for 2-3 hours in a warm place. It should double in size. Then punch it down, and let rise for 40 more minutes.
Preheat your oven to 475 degrees Fahrenheit. Roll your pizza dough into a circle, and bake for 5 minutes.
Prepare the toppings by whisking together the ricotta, lemon zest, and pepper. Spread this mixture on the dough. Add mozzarella and parmesan on top. Bake for 10 more minutes; the cheese should be melted and the crust cooked.
Drizzle with balsamic oil, add arugula, and enjoy your healthy rye pizza!
