Best Slow Cooked Rich Beef Casserole

Ingredients
- 2 Pounds beef brisket
- 1 onion
- 4 cloves garlic, minced
- 3 carrots
- 2 Stems celery, chopped
- 1 can diced tomatoes
- 2 cups Beef Stock
- 1 tablespoon Worcestershire Sauce
- 1 teaspoon dried thyme
- 1 bay leaf
- 1 Cup frozen peas
- 2 tablespoon cornflour
- Salt and pepper, to taste

In a large skillet, heat olive oil. Brown the cut-up meat on all sides, and transfer to the slow cooker.
Add the onion, garlic, carrots, and celery to the skillet. Cook for 5-7 minutes, or until softened.
Add the canned tomatoes, stock, Worcestershire sauce, thyme, bay leaf, salt, and pepper to the skillet. Stir to combine and bring the mixture to a simmer.
Pour the sauce over the beef in the slow cooker. Stir to combine.
Cook the beef casserole on low for 6-8 hours, or on high for 3-4 hours.
In a small bowl, whisk together the cornflour and a few tablespoons of water until smooth. Stir the cornflour mixture and the frozen peas into the slow cooker. Cook on high for an additional 15-30 minutes or until the sauce has thickened.
Remove the bay leaf and serve the slow cooked beef casserole with mashed potatoes or crusty bread.
