Brussels Sprout Curry with Chickpeas Vegan
This hearty, slightly spicy curry not only fills you up properly, but is also very nutritious thanks to Brussels sprouts and chickpeas. It is perfect as a delicious dinner or lunch.

- 500 g Brussels sprouts
- 1 Can chickpeas
- 1 Piece red onion
- 2 tbsp olive oil
For the curry
- 1 TL turmeric
- 1 TL garam masala
- 1 TL ground coriander
- 2 TL curry powder
- 400 ml coconut milk

1. Step
For the Brussels sprouts curry with chickpeas recipe, cut the Brussels sprouts and onion. Rinse the chickpeas.
2. Step
Heat the oil in a pan and sauté the onion.

Add the spices and briefly sauté them.

Add the Brussels sprouts and chickpeas to the pan and stir everything well.

Add the coconut milk and let the curry simmer for 20 minutes.
