Bulgur with vegetables
I love this recipe for vegetable bulgur. It is a simple, quick and healthy dish that is packed with flavor and nutritional value. It's perfect as a quick lunch.
Ingredients
- 1 Cup bulgur
- 2 cups broth
- 2 Spoons olive oil
- 1 onion
- 2 cloves garlic
- 1 peppers
- 1 zucchini
- 1 pcs carrot
- salt and pepper to taste
- Parsley

Directions
Rinse the bulgur under cold water and let it swell in the broth, according to the instructions on the package. This is important, the bulgur should remain soft but not mushy.
In the meantime, heat the olive oil in a frying pan and fry the onion and garlic over a medium heat until golden in colour.
Add the other vegetables (peppers, zucchini, carrots) to the pan and fry until the vegetables are soft. Make sure that the vegetables remain crisp, they must not be cooked completely until soft.
Rinse the bulgur one last time and add to the pan with the vegetables. Add salt and pepper to taste.
Allow everything to simmer together over a low heat for 5 minutes to allow the flavours to combine.
Sprinkle the bulgur on the plate with parsley.
