Caramelised Red Onion Balsamic Relish
Delicious, sweet and tangy, this caramelised onion relish is the perfect addition to sandwiches, burgers or served with a cheese platter. Its deep, rich flavours lend themselves well to various dishes and elevate any meal to the next level. Make a batch, and you'll have a gourmet condiment readily available.
Ingredients
- 4 large red onions, thinly sliced
- 3 tablespoon olive oil
- 2 cloves garlic, finely chopped
- 1 Cup brown sugar
- 3 tbls balsamic vinegar
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon ground black pepper
- 1⁄2 teaspoon Red chili flakes (optional)

Directions
Heat olive oil in a large, deep pan over medium heat. Add onions and garlic to the pan, stir until they are coated in oil. Reduce the heat to medium-low, cover the pan and let it cook for 10 minutes, or until the onions are soft and translucent.
Add brown sugar, balsamic vinegar, salt, pepper, and red chili flakes. Stir well to combine.
Let the mixture cook for about 25-30 minutes, stirring occasionally, until the onions are caramelised and the relish has thickened.
Once the onions have caramelised, remove the pan from the heat and let the relish cool down.
Store the relish in sterilized jars in the refrigerator. The relish can be served chilled, or warmed in the microwave for a few seconds.
