Directions
The first step is to peel and finely chop the onion and garlic. Always remember to make the slices as thin as possible - this will ensure a better combination of flavors.
Then wash the mushrooms and cut them into small pieces. Be sure to wash the mushrooms well, as they may contain soil and sand.
Heat olive oil in a frying pan and add chopped garlic and onions. Fry until the onions become translucent.
Add the sliced mushrooms to the pan and fry until they begin to brown. Add chopped parsley, salt and pepper. Fry for a few more minutes.
Prepare the chicken thighs by cutting them lengthwise, but not cutting them completely through. Then fill them with the mushroom filling.
Place the thighs on a baking sheet and pour a little olive oil over them. The oven should already be preheated to 180 degrees. Bake the chicken for about 30-40 minutes, until it is well roasted. And remember to control the roasting so that the chicken doesn't dry out.
Serve chicken thigh stuffed with mushrooms with rice or bread. As for me, it goes perfectly with a glass of white wine.
