Classic Super Vegetarian Chopped Salad with Dressing

Ingredients
For Salad:
- 1 head of Romaine lettuce, finely chopped
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 cucumber, diced
- 1 large tomato, diced
- 1⁄2 red onion, finely chopped
- 1⁄2 Cup of crumbled feta cheese
- 1⁄2 Cup of pitted black olives, sliced
For Dressing:
- 3 tbls of olive oil
- 2 tbls of red wine vinegar
- 1 clove garlic, minced
- 1 teaspoon of Dijon Mustard
- salt and pepper to taste

Directions
Start by washing all the vegetables under cold water, then dry them off with a clean kitchen towel.
On a chopping board, chop all the salad ingredients into bite-sized pieces and put all together into a large salad bowl.
To prepare the dressing, in a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, Dijon mustard, and season with salt and pepper according to your taste.
Pour the dressing over the salad and toss gently until all the ingredients are well coated.
Sprinkle the feta cheese and sliced olives on top of the salad.
Let the salad sit for at least 10-15 minutes to allow the flavors to meld together.
Serve the salad immediately or refrigerate and serve chilled.
