This flavorful dish features lots of fresh parsley, mint, tomatoes, cucumber and a hint of bulgur, all tossed in a simple lemon and olive oil dressing. Place the bulgur in a bowl, and cover with water by 1/2 inch. Soak for 20 minutes, then drain and squeeze out excess water.
