Crispy Fried Vegetable Tempura with Dipping Sauce
This Japanese-inspired Vegetable Tempura is light, crispy and absolutely delicious. Featuring an array of vegetables batter-fried to golden perfection, it's a great way to incorporate an assortment of veggies into your diet. Serve this with sweet & sour sauce or soy sauce and enjoy a satisfying meat-free meal at home.
Ingredients
- 1 Bell Pepper (sliced into wide strips)
- 1 Sweet Potato (thinly sliced)
- 1 Zucchini (sliced)
- 1 Carrot (sliced)
- 1 Cup broccoli florets
- 1 Cup of Tempura Batter Mix (available at Asian supermarkets)
- 11⁄2 cups of Ice-cold Water
- 1⁄4 Cup All-Purpose Flour (for dusting)
- Vegetable Oil (for frying)
- Salt (to taste)

Directions
First, prepare your vegetables by washing, peeling (if needed), and cutting them into bite-sized pieces.
In a large bowl, combine the tempura batter mix with ice-cold water. Stir until it becomes a consistency similar to pancake batter.
Dust each piece of vegetable lightly with flour. This helps the tempura batter stick better to the vegetables.
Dip each vegetable piece into the batter, ensuring it's evenly coated.
Heat the vegetable oil in a deep fryer or large frying pan. Once it's hot, carefully drop battered vegetables into the oil.
Fry each piece until it turns golden brown. This should take around 3-4 minutes.
Use a slotted spoon to remove the vegetables from the oil and drain them on paper towels to absorb excess oil.
Season with a sprinkle of salt while still hot.
Serve your vegetable tempura fresh and crisp, accompanied by your favorite dipping sauce.
