Directions
To bake nut corners, start with the dough. Combine the flour, sugar, cold butter, egg yolks, vanilla sugar and salt in a bowl. Work the ingredients quickly into a smooth dough. It is important to work quickly here, otherwise the butter will become too soft and make the dough sticky.
Place the dough in a baking tin lined with baking paper and prick it several times with a fork. This prevents the dough from bubbling during baking.
For the filling, melt the butter together with the sugar, vanilla sugar and water in a pan. Add the chopped nuts and allow the mixture to cool slightly. This mixture should not get too hot on the dough, otherwise it may soften.
Spread the nut mixture evenly over the dough and bake at 180 degrees for about 25-30 minutes, or until the surface is golden brown. Make sure that the nuts do not get too dark.
Once the cake has cooled, cut it into equal-sized triangles and dip the corners in melted dark chocolate. The chocolate not only provides a nice contrast, it also complements the sweet nut flavor perfectly. Leave the nut corners to dry and enjoy at Christmas time.
