Crispy pancakes
This is a recipe that I use very often during family weekends. My kids love these pancakes for their crunchiness and deliciousness. They are perfect for breakfast or afternoon snack.
Ingredients
- 2 glasses Wheat flour
- 3 Eggs
- 2 glasses Milks
- 2 spoons butter
- pinch of salt
- Frying oil

The first step is to combine flour, eggs, milk and a pinch of salt in a bowl. I mix the ingredients prepared in this way into a smooth dough. It is important to mix the ingredients well, so as to avoid lumps. When the consistency of the dough is perfect, I add 2 tablespoons of butter.
Then I heat a little oil in the frying pan. Here it is worth remembering that the more oil we add, the crispier our pancakes will be.
Once the pan is hot enough, I pour a thin layer of batter. I remember to spread the batter all over the pan.
I fry the pancake over medium heat until I see the edges begin to gently blush. Then I gently flip it over to the other side. Do not over-fry so that the pancake is not too hard.
I serve the prepared pancakes warm, serving them with, for example, jam, fresh fruit or whipped cream.
