Crispy Parmesan Baked Polenta Chips
Polenta chips are a delicious side dish that can be served as an alternative to potatoes or french fries. They are crispy on the outside and soft on the inside, with a subtle corn that pairs well with a variety of dips and sauces.
Ingredients
- 2 cups polenta or cornmeal
- 4 cups water
- 1 teaspoon salt
- 1⁄2 teaspoon ground black pepper
- 2 tablespoon olive oil
- 1⁄4 Cup parmesan

Directions
In a medium sauce, bring the water to a boil. Add the salt and pepper.
Slow stir in polenta to prevent lumps from forming.
Reduce the heat to low and continue to stir until the polenta thickens and pulls away from the sides of the pan.
Remove from heat and stir in the olive oil and grated Parmesan cheese.
Pour polenta onto a parchment paper lined baking tray, spread out evenly to a thickness of about 1 inch.
Allow the polenta to cool and set for at least 30 minutes.
Preheat the oven to 375°F.
Cut the chip-sized pieces and place them onto a separate baking tray.
Bake for 30-40 minutes, or until the polenta chips are golden brown and crispy on the outside.
Serve hot with your favorite dip or sauce.
