Delicious Bizcocho Sin Levadura
As a pastry lover, I love to experiment in the kitchen. This recipe was a personal challenge for me as I wanted to prepare a light and fluffy cake, but without using yeast. The key is to beat the eggs and sugar well until frothy, and not to open the oven during baking to prevent the cake from falling apart. Despite the lack of yeast, the result is a fluffy cake with an incredible flavor. I hope you enjoy this recipe as much as I do.

- 200 grams sugar

Directions
First, preheat the oven to 180 degrees Celsius.
Second, beat the eggs with the sugar until you get a frothy white mixture. Try to do it with a hand mixer to save time and energy.
Add the milk and oil while whisking. The key is to add the milk at room temperature so that it does not break the emulsion.
Then, add the flour little by little, always sifting it to avoid lumps in the dough.
Add the vanilla essence and continue mixing until a homogeneous mixture is obtained.
Cover the bottom and sides of a greased baking pan with butter, it is recommended to use a springform pan to make unmolding easier.
Fill the mold with the mixture and bake for 45 minutes. Remember not to open the oven too early to prevent the cake from falling.
Finally, let the cake cool before unmolding and serving.
It is a simple recipe but full of flavor. Perfect for a last minute dessert or to accompany your afternoon coffee.
