Directions

360 min.
1. Step

Start by greasing the pudding mold with extra butter, so that the pudding does not stick. This is a recommendation based on some unfortunate experiences in the past.

2. Step

Beat the butter and brown sugar until a smooth cream forms. Make sure the sugar is completely dissolved.

3. Step

Fold in the eggs one at a time, making sure each egg is well incorporated before adding the next. This is a useful technique for achieving a light and airy texture.

4. Step

Add the flour, pudding spice and baking powder to the bowl and mix well.

5. Step

Add the dried fruit, toasted almonds and lemon and orange zest to the bowl and stir well. Remember, if you select the fruits based on your preferences, it will give your pudding a personalized touch.

6. Step

Pour the batter into the greased pan and bake at 160 °C (350 °F) for 2 hours, or until a toothpick comes out clean.

7. Step

Let the pudding cool slightly before unmolding and serve with a little rum on top for an extra festive flavor.
