Delicious Classic Swiss Bircher Muesli Overnight Oats
Bircher Muesli has been a family breakfast staple for as long as I can remember. The wonderful thing about this Swiss traditional recipe is not only its simplicity but also the room it gives for creativity. As someone who treasures a good breakfast meal and who has prepared this countless times, I can say Bircher Muesli never gets boring. You can switch it up with different kinds of fruits, nuts, or even dairy substitutes-- each change promises a different adventure for your taste buds!
Ingredients
- 2 cups of rolled oats
- 11⁄2 cups of plant-based milk (I usually use almond milk, but you can also use cow's milk or any other milk that you prefer)
- 1 Cup of Greek yogurt
- 2 tbls of honey (You can adjust this according to your taste. If you prefer a vegan variant, substitute honey with maple syrup or agave syrup)
- 1 apple, grated
- A squeeze of lemon juice
- A handful of mixed nuts and seeds, for topping
- A choice of your favorite fruits, for topping

Directions
Combine the rolled oats, milk, Greek yogurt, and honey in a large bowl. Ensure each grain of oat gets a good soak; this is vital for achieving the soft, chewy texture that a perfect Muesli should have.
Grate the apple (I leave the skin on for extra fiber, but you can peel it if you prefer) directly into the oat mixture and add a squeeze of lemon to prevent the apple from turning brown. Mix until well combined.
Cover the bowl with cling film and leave it to soak in the fridge overnight. This is essential to allow the flavor to develop and the oats to absorb the liquid.
The next morning, give the muesli a good stir. You'll notice that the oats have absorbed almost all the liquid and thickened considerably.
Top the muesli with a mix of your favorite fruits, nuts, and seeds. I often use banana slices, fresh berries, and a sprinkle of chia seeds, but feel free to mix it up.
