Ingredients
- 3 egg whites
- Salt, to taste
- Black pepper, to taste
- 1⁄4 Cup of chopped vegetables (such as bell peppers, onions tomatoes spinach)
- 1 teaspoon butter or olive oil
- 1 teaspoon chopped fresh herbs (like basil, parsley or chives)
- Pinch of shredded cheese (optional)

Directions
Heat butter or oil in a non-stick frying pan over medium heat. While the pan heats, in a bowl heavily whisk the egg whites until frothy.
Add the chopped vegetables to the hot pan and sauté until slightly tender.
Pour the whipped egg whites over the sauteed veggies in pan. Tilt the pan to spread them out evenly.
Sprinkle with salt and pepper and then let cook for a few minutes without stirring until the edges start to become slightly firm.
Gently flip the omelette with a spatula and let it cook for another few minutes or until it’s fully cooked.
Sprinkle with fresh herbs, fold the omelette in half and serve immediately. If desired, add a little shredded cheese before folding.
