- 1 Cup whole-wheat flour

- 2 teaspoon baking soda
- 1 teaspoon salt
- 2 teaspoon cinnamon
- 1 grated pear
- 13⁄4 Cup grated carrot
- 1⁄2 Cup dried cranberries
- 1⁄2 Cup chopped toasted walnuts
- 1⁄2 Cup unsweetened coconut
- 2⁄3 Cup vegetable oil
- 3 egg
- 1 teaspoon vanilla

1. Step
Preheat oven to 350 degrees Fahrenheit. Combine dry ingredients in one bowl, wet in another, and the pear, carrots, cranberries, walnuts, and coconut in a third bowl.
