Delicious lean pork in sauce
Pork in Sauce is a dish that has a special place in my heart and in my kitchen. I have prepared it numerous times for friends and family, and it has always been a sure winner. The juiciness of the lean pork combines perfectly with a homemade sauce, resulting in a simple but incredibly flavorful dish.

- 1 onion
- 1 green bell pepper

Directions
Start by cutting the lean pork into medium-sized cubes. I always prefer to make the cubes not too small so that the meat remains juicy and with a chewy texture.
Once the meat is cut, add salt and pepper to taste. Heat a little olive oil in a pan and add the meat cubes. Cook over medium-high heat until browned on all sides. Remove the meat from the pan and set aside.
In the same pan, add the onion, garlic, bell bell pepper and carrot, all finely chopped. Letting these vegetables simmer really enhances the flavor of the sauce.
When the vegetables are ready, put the meat back in the pan and add the white wine. The wine is very important to give a deep rich taste to the sauce, so I recommend that you use a good quality one.
Allow the wine to reduce by half and then add the chicken stock.
Let it simmer for about an hour. A good way to know when it is ready is to taste the meat; if it is tender and falls apart easily, the dish is ready.
