Delicious nut sponge cake

As a small child, my mother often made this delicious nut sponge cake. The family loved it and it is still one of my favourite cakes. It's easy to make and the list of ingredients is short, making it ideal for beginners and cooks.

1. Step

Separate the eggs in two. Make sure that the yolks are completely separated from the whites. Beat the whites with a pinch of salt until stiff. Add the sugar and vanilla sugar to the yolks and mix until creamy. Always pay attention to this step, because without the sugar dissolved, the batter will not be good.

2. Step

To the creamy egg yolks add the chopped walnuts, flour and baking powder. Mix gently but thoroughly. Do not skip this step, because without the baking powder the dough will not be light and soft enough. Then gently fold in the stiff egg whites.

3. Step

At this point, it is important to note that the dough should be mixed gently so that the foam does not break up, thus guaranteeing the lightness of the dough.

4. Step

Preheat the oven to 180°C, while the dough is being rolled out into a medium-sized baking pan lined with baking paper. Bake over a medium heat for about 15 minutes until golden brown. Always check the progress of the baking, as each oven will take a different amount of time to achieve the desired result.

5. Step

Allow the fried dough to cool, then slice as desired. Sprinkle with icing sugar and serve with fruit or sour cream to taste.
