Delicious pork ribs with potatoes

This delicious recipe for Pork Ribs with Potatoes is one of my favorites to prepare on the weekends. It's hearty, flavorful and always a hit in my house. The pork ribs are very tender, almost melt-in-your-mouth tender, and the potatoes absorb all the flavors of the meat juices, creating a truly succulent dish.

1. Step

Start by preheating the oven to 180°C. While it is heating, you can peel the potatoes and cut them into thin slices. This will help them cook faster and more evenly.

2. Step

In an ovenproof dish, add a drizzle of olive oil and place the potato slices on the bottom. Make sure they are well spread out so that they all cook evenly. Season to taste with salt and pepper.

3. Step

Next, place the pork ribs on top of the potatoes. You will have previously seasoned them with salt, pepper and rosemary to taste. Don't worry if you have a little rosemary left over, as it will add an extra touch of flavor to the dish.

4. Step

Peel and julienne the onion and finely chop the garlic. Sprinkle them over the ribs. This will add an extra layer of flavor to the meat.

5. Step

Pour the glass of white wine over the ribs and potatoes. Don't worry if it seems like a lot of liquid now, most of it will evaporate during cooking and only the concentrated flavors will remain.

6. Step

Cover the dish with aluminum foil and cook in the oven for at least 2 hours. During this time, the meat will soften and the potatoes will be impregnated with the flavor of the pork and wine.

7. Step

After that time, remove the aluminum foil and increase the temperature to 200°C. This will give the ribs a crispy, golden brown outer layer. Leave them for another 15-20 minutes, but keep an eye on them to prevent them from burning.

8. Step

When the ribs are browned to your liking, remove the dish from the oven and let it rest for a few minutes before serving.
