Easy Flavorful Mexican Chicken Fajitas
Chicken fajitas are a delicious flavorful Tex-Mex dish that is quick and easy to prepare. With tender strips of chicken, sautéed peppers and onions, and a blend of spices, these fajitas make for a satisfying meal. Serve them with warm tortillas and your favorite toppings for a complete and delicious dinner.
Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 red bell pepper
- 1 green bell pepper
- 1 yellow bell pepper
- 1 onion
- 3 tbls olive oil
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- 8 tortillas
- Optional toppings: shredded cheese, sour cream guacamole salsa

Directions
Slice the chicken breasts into thin strips. Set aside.
Cut the bell peppers and onion into thin strips as well.
In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
Add the chicken to the skillet and cook until browned and cooked through, about 5 minutes. Remove the chicken from the skillet.
In the same skillet, add the remaining olive oil.
Add the bell peppers and onion to the skillet and sauté for 4-5 minutes, or until they are tender-crisp.
In a small bowl, combine the chili powder, cumin, paprika, garlic powder, salt, and pepper. Sprinkle this spice mixture over the peppers and onion in the skillet, and stir to coat evenly.
Return the cooked chicken to the skillet and toss everything together for the flavors to meld, for about 1-2 minutes.
Heat tortillas in a separate skillet or microwave.
Serve the chicken fajita mixture in tortillas, along with your desired toppings.
