Easy Fresh Strawberry Icing From Scratch
Homemade Strawberry icing is a delicious and refreshing topping perfect for any cake, cookie or muffin. This delectable treat is made with fresh strawberries for a natural and unique flavor. It’s smooth, creamy, and easy to spread – plus, it’s naturally colored!
Ingredients
- 1 Cup of fresh strawberries
- 1⁄4 Cup of granulated sugar
- 1 tablespoon of fresh lemon juice
- 1⁄2 Cup of unsalted butter, softened
- 4 cups of powdered sugar
- 1 tablespoon of heavy cream (as needed)

Directions
Puree the strawberries in a blender or food processor. If you prefer a seedless frosting, strain the strawberry puree.
Combine the pureed strawberries, granulated sugar, and lemon juice in a medium saucepan and simmer over medium heat for about 15-20 minutes, or until the mixture has thickened and reduced by about half.
Remove from heat and cool completely.
In a large bowl, beat the butter until light and fluffy. Gradually add in powdered sugar, one cup at a time, beating well after each addition.
Pour in the cooled strawberry mixture, beat until well combined. If your frosting is too thin, add more powdered sugar. If it's too thick, add heavy cream a tablespoon at a time until the desired consistency is reached.
