Fresh Creamy Garlic Ricotta Pasta Sauce
A delightfully simple yet richly flavored sauce, this Ricotta Pasta Sauce is the perfect weeknight dinner that tastes like it took hours to make. Made with staple kitchen ingredients, it pairs fabulously with any type of pasta.
Ingredients
- 2 cups of ricotta cheese
- 1⁄2 Cup of grated Parmesan cheese
- 1 Cup of milk
- 2 cloves of garlic, minced
- 2 tbls of olive oil
- salt and pepper to taste
- 1 teaspoon of dried basil
- 2 tbls of fresh parsley, finely chopped
- OPTIONAL: Chili flakes for some heat

Directions
In a large saucepan heat the olive oil over medium heat. Add the minced garlic and saute until it becomes fragrant, around 1 minute.
Stir in the ricotta cheese and milk. Heat the mixture gently, stirring continuously to prevent it from sticking or burning.
Once the cheese and milk have combined into a smooth sauce, add the parmesan. Stir well until it is melted and incorporated.
Season with salt, pepper, and dried basil. If you like your sauce with a bit of a kick, add chili flakes to taste.
Stir in the chopped parsley and turn off the heat.
Toss your cooked pasta directly in the sauce, ensuring it is evenly coated. Serve immediately for the best flavor and texture.
OPTIONAL: Sprinkle additional parmesan cheese or garnish with fresh basil leaves on top before serving.
