Fresh Vegetarian Vietnamese Rice Paper Spring Rolls
Vietnamese Rice Paper Rolls, commonly known as spring rolls, are a refreshing and light dish perfect for any meal or snack. This recipe uses fresh and vibrant ingredients like mint, shrimp, and vegetables, all wrapped up in a chewy rice paper. It's a fun, healthy, and creative way to jazz up your mealtime.
Ingredients
- 8 round rice paper wrappers
- 1 head iceberg lettuce, shredded
- 2 medium carrots, peeled and cut into thin strips
- 1 red bell pepper, thinly sliced
- 1 cucumber, cut into thin strips
- 20 fresh mint leaves
- 16 cooked large shrimp, peeled and halved lengthwise
- 2 green onions, cut into thin strips
- 1 Cup fresh cilantro leaves
- 1⁄4 teaspoon salt
- Dipping sauce of your choice

Directions
Prepare all your vegetables and shrimp as indicated in the ingredients list.
Soften the rice paper wrappers by dipping them one at a time into warm water for a few seconds, then lay flat on a slightly wet surface.
On the softened wrapper, in the center but slightly closer to the edge facing you, place a small amount of lettuce, followed by a little of each ingredient: carrots, bell pepper, cucumber strips, a couple of mint leaves, two halves of shrimp (smooth side down), some green onions, cilantro leaves, and a sprinkle of salt.
Start rolling the wrapper over the filling, tuck in the sides as you go, just like you would do with a burrito. You need to roll them as tight as possible.
Continue with the remaining wrappers and ingredients.
Serve immediately with the dipping sauce of your choice. If desired, you can cut rolls in half diagonally for a nice presentation.
