Gnocchi with spinach
Gnocchi with spinach is one of my favourite dishes and I regularly include this recipe in my weekly menu. Not only is it a great way to get some greens in, but it also provides a nice change from classic pasta dishes.
Ingredients
- 500 g gnocchi
- 2 Spoons olive oil
- 2 Cloves garlic
- 200 g baby spinach
- 1⁄2 A cup of grated parmesan
- salt and pepper to taste

Directions
First, cook the gnocchi according to the instructions on the package.
While the gnocchi is cooking, heat the olive oil in a large pan. Add the garlic cloves and fry them until they become fragrant. It's important to watch that the garlic doesn't burn, as it can give the dish an unpleasant bitter taste.
Then add the baby spinach to the pan and let it soften, stirring constantly. The spinach will shrink, so don't worry if it looks like too much.
Once the spinach is done, the gnocchi should also be cooked. Drain them and add them to the pan with the spinach. Add the grated parmesan cheese and mix until the dough is slightly sticky. Your gnocchi with spinach is now ready!
Taste and add salt and pepper as needed. I usually add about half a teaspoon of salt and a quarter teaspoon of pepper, but it's a matter of personal preference.
