Healthy beet salad
This beet salad is a personal favorite of mine that I have made countless times. The sweetness of the raw beet pairs perfectly with the sour bite of the apple and the crunchy & nutty flavor of the walnuts. It's an easy, healthy and delicious meal that I serve as a main dish or side dish for barbecue dinners and family dinners.
Ingredients
- 3 medium size Raw beet
- 2 apple
- 100 g walnuts
- 2 spring onions
- 2 Tablespoon lemon juice
- 2 Tablespoon olive oil
- salt and black pepper to taste

Wash and peel the beet thoroughly. If you have sensitive hands, I recommend wearing gloves to prevent your hands from turning red from the beet. Then roughly grate the beet and place it in a large bowl.
For the beet salad recipe, wash the apples, remove the core and also roughly grate them. The acidity of the apple ensures that the beet does not turn brown, so do not hesitate to mix both ingredients.
Coarsely chop the walnuts and lightly toast them in a pan without oil until they start to smell. This will make the nuts crunchier and more aromatic. Add the toasted walnuts to the beet and apple mixture in the bowl.
Wash the spring onions, cut off the ends and cut into thin rings. Add to the bowl with the rest of the ingredients.
Add lemon juice, olive oil, salt and pepper and mix everything well. I find that the natural sweetness of the beet is enough, but if you prefer a little sweeter, you can also add a teaspoon of honey.
Let the beet salad stand for about 20 minutes before serving, so that the flavors can develop better. A healthy vegetarian side dish for the main meal.
