Pre-heat the oven to 180ºC. Meanwhile, prepare a cake pan, adding a little vegetable oil to prevent the dough from sticking.

2. Step

Tip: This cake is excellent for breakfast or a snack, and if you accompany it with some vegan jam, I assure you that you will lick your fingers.

3. Step

In a large bowl, mix the flour, sugar and baking soda. Here it is important to use a wooden spoon so as not to disturb the reaction of the baking soda with the wet ingredients that we are going to add later.

Add the soy milk and apple cider vinegar to the dry mixture and stir well until a homogeneous mass is obtained.

Add the lime juice and zest, this will give a fresh and citric touch to the cake that I personally love.

Add the olive oil slowly while continuing to stir. This will add moisture and help keep the cake from drying out.

If you feel like it, you can add dried fruits to the mixture. I usually add raisins or walnuts, they give it an extra texture and an incredible flavor.

Pour the mixture into the pan and bake for about 35-40 minutes or until a toothpick inserted comes out clean.
