Directions
In a large bowl, mix together the chopped onions, cucumbers, and bell peppers. Sprinkle the 2 tablespoons of salt over the vegetable mixture, cover, and let sit at room temperature for about 2 hours to extract the juice from the vegetables.
After 2 hours, rinse the vegetables in a colander under cold water to remove the salt. Drain well, pressing out any remaining liquid.
In a large saucepan, combine the granulated sugar, mustard seeds, celery seeds, turmeric, and white vinegar. Bring this mixture to a boil over medium heat, stirring until the sugar fully dissolves.
Add the drained vegetables to the saucepan and return to a boil. Reduce the heat to low and simmer uncovered for 10 minutes.
Carefully ladle the hot relish into sterilized jars, making sure to leave about 1/2 inch space from the top. Seal the jars while the relish is still hot.
Allow the jars to cool to room temperature before storing them in the refrigerator. The relish will keep in the fridge for up to 1 month.
