Homemade Fresh Shrimp Vegetable Summer Rolls
Summer Rolls are a vibrant, refreshing dish consisting of crisp vegetables, tender shrimp, and fragrant herbs all rolled up in rice paper. These rolls are perfect for a light lunch, an appetizer, or a side dish.
Ingredients
- 8 rice paper wrappers
- 1 Cup of cooked shrimp, peeled and deveined
- 1 cucumber, julienned
- 1 carrot, julienned
- 2 cups lettuce, shredded
- 1 Cup of fresh mint leaves
- 1 Cup of fresh cilantro
- 1⁄4 Cup of unsalted peanuts, crushed
- Dipping sauce of your choice

Directions
Fill a large dish with warm water. Dip one wrapper into the hot water for 1 second to soften. Lay wrapper flat on a clean surface.
In a row across the center, place 2-3 pieces of shrimp, a handful of lettuce, cucumber, carrot, fresh herbs, and peanuts, leaving about 2 inches uncovered on each side.
Fold in uncovered sides of wrapper. Then tightly roll the wrapper, beginning at the end with the lettuce. Repeat with remaining ingredients.
Serve the rolls whole, or if you prefer, slice them in half diagonally and then serve with your choice of dip.
