Homemade Fried Chicken Schnitzel Caesar Salad
This dish harmonizes the crispy chicken schnitzel with the classic yet robust Caesar salad. The recipe is simple, but the results are truly fantastic.
Ingredients
For the Chicken Schnitzel:
- 4 boneless, skinless chicken breasts
- salt and pepper to taste
- 1 Cup flour
- 2 eggs
- 2 cups Panko breadcrumbs
- Oil for frying
For the Caesar Salad:
- 2 heads Romaine lettuce, washed and chopped
- 1 Cup caesar dressing
- 1⁄2 Cup parmesan
- 1 Cup croutons
- 2 lemons, juiced

Start by preparing the chicken. Lay each chicken breast between two pieces of cling film and gently pound with a rolling pin until thin. This helps the chicken to cook evenly and absorb the seasonings better.
Season the flattened chicken breasts with salt and pepper. Next, dredge the seasoned chicken in flour, followed by egg and panko breadcrumbs respectively.
Heat oil in a frying pan over medium-high heat. Once heated, fry the breaded chicken in batches, turning once, until golden brown and cooked through. This usually takes around 4 minutes per side. Place cooked schnitzels on a wire rack to drain excess oil and keep them crispy.
For the salad, toss the chopped Romaine lettuce with Caesar dressing till every leaf is coated well. I prefer making the dressing at home, but a good quality store-bought Caesar dressing works just as fine.
Add the Parmesan cheese and croutons to the dressed lettuce and gently toss to combine.
To serve, thinly slice the cooked chicken schnitzels. Lay the slices over the Caesar salad. Finish off with a good squeeze of fresh lemon juice. This brightens up the flavors and perfectly complements the savory chicken and Parmesan cheese.
