How to cook Authentic Traditional Spanish Chicken
Spanish Chicken is a hearty, robust and flavorful dish that is a classic Mediterranean meal. Ingredients
- 4 boneless chicken breasts, skin on
- 2 tbls olive oil
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 can diced tomatoes
- 1⁄2 Cup green olives, pitted
- 1⁄2 Cup white wine
- 1 teaspoon smoked paprika
- Salt, to taste
- Black pepper, freshly ground to taste
- Handful of fresh parsley, finely chopped for garnish

Directions
In a large frying pan, heat the olive oil over medium high heat.
Season the chicken breasts with salt and pepper and add to the pan. Cook for about 5-7 minutes on each side, or until golden brown. Remove and set aside.
Reduce heat to medium and add chopped onions, garlic and bell peppers to the same pan. Cook, stirring occasionally, until vegetables are softened.
Add the diced tomatoes, olives, white wine, and paprika to the pan. Stir well and bring to a boil.
Lower the heat to a simmer and add the chicken back into the pan. Cover and let simmer for about 45 minutes to an hour, or until chicken is cooked through and tender.
Adjust seasoning if needed. Garnish with chopped parsley before serving.
