How to make Fluffy Ricotta Pancakes

Ingredients
- 11⁄2 cups of all-purpose flour
- 1⁄4 Cup of granulated sugar
- 1 teaspoon of baking powder
- 1⁄2 teaspoon of baking soda
- 1⁄4 teaspoon of salt
- 1 Cup of ricotta cheese
- 2 large eggs
- 3⁄4 Cup of milk
- 1⁄2 teaspoon of pure vanilla extract
- Butter or spray for pan

Directions
In a large bowl, combine the flour, sugar, baking powder, baking soda and salt. Set aside
In another bowl, whisk together the Ricotta Cheese, eggs, milk and vanilla extract.
Slowly add this mixture to the dry ingredients.
Stir until it’s well combined, don't over-mix.
Preheat your pan over medium heat. Add a small amount of butter or spray if needed.
Pour approximately 1/4 cup of the batter to the pan for each pancake.
Cook until bubbles appear on the surface of the pancake, then flip and cook until golden brown.
Serve the pancakes warm with your favourite syrup, fruit or powdered sugar.
