How to make Healthy Cauliflower Rice Recipe
This incredibly easy and quick Cauliflower Rice is a fantastic, low-carb, grain-free alternative to traditional rice. This simple recipe is packed full of flavor, fiber, and plenty of vitamins making it ideal for a healthy side dish. Serve it with any main course for a filling and satisfying meal.
Ingredients
- 1 large head of cauliflower
- 2 tbls of olive oil
- salt to taste
- Freshly ground Black Pepper to taste
- 2 cloves garlic, minced
- Optional: chopped fresh parsley for garnish

Directions
First, wash and thoroughly dry the cauliflower. Remove all the greens from the cauliflower.
Cut the cauliflower into small chunks and pulse in a food processor until it resembles rice. If you don't have a food processor, you can also use a manual grater with medium-sized holes.
Heat olive oil in a skillet over medium heat then add the garlic allowing it to sauté until fragrant.
Add the cauliflower 'rice' into the skillet and cook for about 5 to 6 minutes, until it becomes soft and golden.
Season the riced cauliflower with salt and pepper then taste and adjust the seasoning as necessary.
If desired, sprinkle with chopped fresh parsley before serving.
