Ingredients
- 2 canned chipotle peppers in adobo sauce
- 1 tablespoon adobo sauce (from the canned chipotle peppers)
- 3 ripe roma tomatoes
- 1 small white onion, quartered
- 3 cloves Garlic, peeled
- 1 tablespoon olive oil
- Salt, to taste
- 1 tablespoon smoked paprika
- 1⁄2 Cup water

Set your grill to medium-high heat. Place the tomatoes, onion, and garlic on a tray and drizzle with olive oil. Season with a pinch of salt.
Put the tray on the grill and cook for about 10 minutes, turning the vegetables occasionally, until they are charred and soft.
Remove the vegetables from the grill and allow them to cool slightly.
In a blender or food processor, combine the grilled vegetables, chipotle peppers, adobo sauce, smoked paprika, and water.
Blend until smooth. If the sauce is too thick, add more water until you reach your desired consistency.
