Indian Crispy Fried Chicken Drumsticks

Ingredients
- 500 gms of Chicken drumsticks
- 2 cups of vegetable oil for frying
- 1 Cup of all-purpose flour
- 1⁄4 Cup of cornstarch
- 1 Cup of buttermilk
- 2 teaspoons of ginger-garlic paste
- 1 teaspoon of turmeric powder
- 2 teaspoons of Cayenne pepper
- 1 teaspoon of garam masala
- salt to taste

Begin by mixing the ginger-garlic paste, turmeric powder, cayenne pepper, garam masala, and salt in a bowl. These spices lend the chicken its unique Indian flavor, and it's essential not to omit any of them.
Add the chicken drumsticks to the spice mixture, ensuring the drumsticks are well coated. Marinate the chicken for at least 30 minutes. The longer you marinate the chicken, the better the flavors will be absorbed.
After marination, dip each drumstick into the buttermilk and then roll in a mixture of all-purpose flour and cornstarch. The buttermilk aids in tenderizing the chicken while the flour and cornstarch combination will make the chicken crispy.
Heat up the vegetable oil in a deep frying pan over medium heat. Make sure the oil is hot enough before adding the chicken to avoid a soggy outcome. A good indicator is when a small drop of batter sizzles and rises to the top.
Now place the chicken pieces into the hot oil carefully, and fry until they turn golden brown. Try not to overcrowd the pan; fry in batches if necessary to ensure even cooking.
